Coconut sugar and regular sugar are both sweeteners. Choose between them for the recipe and flavor you want, rather than treating coconut sugar as a health treatment or a reason to use more.
Both contribute added sugar
FDA guidance includes packaged sweeteners in its definition of added sugars. Coconut sugar does not become exempt because it comes from a different plant. Read the serving information and consider the quantity used in the whole recipe.
Baking performance is a separate question
A change in sweetener can affect a recipe’s color, flavor and texture. Start with a recipe developed for the ingredient you plan to use. Do not assume that a substitution will reproduce the original result.
Avoid unsupported blood-sugar promises
We do not recommend coconut sugar as a diabetes treatment or promise a particular glycemic response. If you manage carbohydrate intake for a medical reason, follow your care plan rather than a general sweetener comparison.
Use a measured recipe
Our coconut cake specifies granulated sugar, while our coconut cookies use a measured blend of sweeteners. Follow those lists as written.
